Apple + Blueberry Spice Smoothie Bowl

I discovered smoothie bowls earlier this year, back in January or February, and since then have made and consumed more than I can count. There’s just something so nice about taking your smoothie to the next level from time to time and adding a little crunch to the mix.

However, I’m not so good about variety when it comes to this delicious meal option. I usually end up tossing in the same ingredients time and again (even when I don’t mean to) and the result is a rather “tropical” flavor.

Now that fall is here, I’ve been trying to add an autumn twist to many of my go-to meals, and the smoothie bowl was at the top of my list to experiment with!

The result: A crisp and comforting apple and blueberry spice smoothie! So, if you’ve returned home from the apple orchard this fall with more apples than you know what to do with, or you’re looking to add a little excitement to your breakfast routine, consider giving this recipe a go.

Apple + Blueberry Spice Smoothie Bowl

Makes one serving.

Ingredients

For smoothie:

  • 2 cups chopped apple (roughly one large or 2 medium apples)
  • 1/2 cup frozen blueberries
  • 2 pitted dates (optional, but adds a little sweetness!)
  • 1/2 cup Greek yogurt (I used vanilla, regular would be fine)
  • 1/2 cup almond milk
  • 1 cup tightly packed spinach
  • Dash of cinnamon, nutmeg, and allspice (or apple pie spice)

For topping:

  • 2 tablespoons chopped apple (set some aside from what you chopped for smoothie)
  • 2 tablespoons fresh or thawed blueberries
  • Small handful of chopped pecans
  • Small handful of rolled oats
Directions
  1. Add all of the smoothie ingredients, except for spices, into a blender (I suggest putting the yogurt and milk in first, then following with the rest of the ingredients for easier blending.)
  2. Blend thoroughly, scraping down sides of blender and stirring as needed.
  3. Add spices and pulse a few more seconds.
  4. Pour into a bowl.
  5. Top with chopped apples, blueberries, pecans, and oats. Sprinkle with more cinnamon if desired.

That’s it! Just a little heads up – the consistency of this smoothie bowl will be a bit like applesauce because… well… you’re blending apples.

Also, consider mixing two different apples varieties together like you would to make applesauce for a bit of added depth to the flavor. I used one honeycrisp and one red delicious. By no means required, but if you’ve got multiple varieties lying around, worth trying!

Almost every nook and cranny of our home is filled Almost every nook and cranny of our home is filled with sentimental pieces. I’m the daughter, granddaughter, and niece that will gladly take items the family may otherwise get rid of or have tucked away in closets for decades, untouched. The kind of traveler that looks for leaves and shells and rocks to keep in my pockets and carry with me, so I can always hold a piece of where I’ve been. Usually, I have no idea where these things may come to live in my own home, but they always manage to find their perfect places in time.

These shelves alone hold a basket full of stones and shells from around the world, framed high school love letters my grandpa wrote to my grandma in the 1940s, an assortment of found and inherited books, some well more than a century old, and sweet portraits of my great grandparents. 

While I strive to avoid clutter, I do love filling every room with as many meaningful pieces as I can. Because while many things are just things, some are so much more. 🤍
